Omelette with mushrooms and spinach

Ingredients:

4 eggs
100 g mushrooms, sliced
50 g fresh spinach
1/2 onion, finely chopped
50 g grated cheese (optional)
2 tbsp. butter
salt and pepper to taste
Preparation:

In a bowl, beat the eggs with salt and pepper.
In a skillet, heat butter over medium heat.
Fry the onions until soft, add the mushrooms and cook until they are golden.
Add the spinach and cook for another 1-2 minutes until wilted.
Pour the beaten eggs into the skillet and stir.
Sprinkle the grated cheese (if using) on top.
Cook the omelet over medium heat until cooked through.
Serve hot.
